Sonia Rose Steak Sandwich
A sandwich developed by Gary Thompson, (who once owned a restaurant in Madison, NJ called “The Sonia Rose,” as a Greenwich Village alternative to a Philly Cheesesteak (because, let’s face it, there’s no point trying to make a Philly Cheesesteak in New York.)
Sweet Onion, sliced thin
Blacken a slice of beef in a little olive oil to char some fond onto the bottom of a pot Saute onions, scraping the fond up with the juice that comes off onions Add a little brown sugar to caramelize onions Add a touch of balsamic, then remove from pot
Flank steak, sliced thin across the grain
Marinate in Adolph’s, olive oil, garlic, onion, balsamic Brown in the pot you just caramelized onions in
White American Cheese
mild and fatty
Sauce
Ketchup, balsamic, garlic, diced hot chili pepper (Scoville to taste) Sauté chili & garlic in a little olive oil, mix in ketchup & vinegar, and stir briefly over heat to blend
Kaiser roll
Toast sliced roll If you have a toaster oven, melt cheese on one side, heat steak & onions on the other
Use sauce generously
